The first step in making Irani Chai is to boil milk in a batch of 100 litres by firewood. This batch is then divided to smaller portions of 7 litres each and is simmered on a gas burner.

A cup of chai is 90ml and is consumed by hundreds of thousands of people every day across the city from a range of establishments, from the humble irani chai cafe at your street corner to the modern Starbucks with valet parking.
